Turning Over a New Leaf by Eating More of Them.


We by no means eat like most Americans, and that is not because we live in Korea. Our diets have transformed a lot since we were married 8 years ago. The question of dinner was one of what kind of meat would we eat and what would go with it. Gone are the days of rice  and chicken, but we still fall into old habits where we don't get the amount of veggies we should. So Jari has started looking for new meals, meatless ones. Here was a delicious success: 


Kale and Broccoli salad. Jari has figured out that if you massage the kale for a few minutes it softens and is actually fun to eat. It was topped with sunflower seeds, craisens (calls for  dried cherries but we don't have those here) and a sweet dressing. 


Here was my contribution, fresh plantain chips.


On to the veggitarian burgers. Black beans, brown rice, onion, panko, BBQ sauce, and a mix of toasted nuts and spices. The prep time was listed as 30 minutes...


Mixed up.


Cooked in olive oil for 3 min each side and 1.25 hours later we had our burgers.


Oh here is Jari's salad. Yummy.

I will say thay veggitarian dishes are a tad carb heavy but given this was our pre-marathon meal I was ok with that. 

The girls gave it a big thumbs up so we will be doing this again.
